Gastronomy of Arequipa
Arequipa cuisine is one of the most diverse of the country, which present a
variety of dishes such as:
Chupe De Camarones: Shrimp soup with milk, eggs and oregano.
Rocoto Relleno: stuffed bell pepper, seeded, chopped meat, cheese, milk
Soltero: salad with cheese, beans, onions, olives and hot peppers.
Adobo: pork marinated with chicha and spices, cooked in a pot.
Ocopa: boiled potatoes, topped with cheese sauce, beans, onions, olives
and hot peppers.
Escribano: potato salad, red pepper, vinegar, oil, tomatoes and parsley.
Pebre: soup with lamb, beef, or corned mutton woolen
Also don’t forget to taste the popular “cheese ice cream” (elaborated with cream
of milk) a very delicious sweet.
